Mmm Brussels sprouts! I know I’ve waxed poetic about my fairly recent obsession with Brussels sprouts (check out these delicious and easy recipes here and here). I typically buy a bag of whole Brussels sprouts almost every week from Trader Joe’s, and I’ve been experimenting with lots of different recipes lately. This recipe just might be my new, fancy favorite – Roasted Brussels sprouts with golden raisins, red onion, and toasted walnuts! I have been on a golden raisin kick lately; they’re the perfect sweet bite to so many dishes! The Brussels sprouts would be perfect as a weeknight side dish or even for a Thanksgiving dinner feast. The flavors and textures meld together so well, and it’s not a complicated or difficult recipe to whip up. And I am convinced you’ll convert anyone into a Brussels sprouts fan with these, too!
Brussels Sprouts with Golden Raisins, Red Onion, & Toasted Walnuts
- 1 pound fresh Brussels sprouts, trimmed and halved
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1 tablespoon honey (or maple syrup)
- 1 teaspoon crushed red pepper
- 3/4 cup of golden raisins
- 1/2 red onion
- 1/2 cup of walnuts
Preheat the oven to 400 degrees. Once Brussels sprouts are trimmed and halved, toss them on a baking sheet with the olive oil, honey, sea salt, and crushed red pepper, and roast them in the oven for 15 minutes. While these are baking, soak your golden raisins in hot water or orange juice (to plump them up & make them heavenly!). Cut up the red onion into thin slivers, and lightly chop walnuts. Once the Brussels sprouts have roasted, toss them with the red onion and walnuts, and then put it all back in the oven for 15 minutes. After 15 minutes, add the golden raisins (drained) to the mix, and roast for another 5 minutes. Serve immediately and enjoy!
